      First, let's explore the techniques that will allow you to achieve a professional creamy texture in a standard freezer. At the end of this article, you can choose between two classic base recipes: elegant vanilla custard or rich chocolate.

      Freezing Methods: How to Replace the Machinery

      The main challenge of making ice cream at home is the formation of large ice crystals. Here is how to defeat them:

      1. The Periodic Stirring Method

      This is the most effective approach for a home kitchen.

      • Place your chilled mixture in the freezer.

      • Every 30–40 minutes, take it out and mix it intensely.

      • Pro Tip: Use an immersion blender or a hand mixer. They break up ice crystals much better than a fork, making the structure airier. Repeat this process 3–5 times.

      • 250 ml milk

      • 150 g sugar

      • 3 tbsp cocoa powder

      • 70 g dark chocolate & 70 g milk chocolate

      • 2 tbsp honey (makes the texture more pliable)

      • A pinch of salt

      Preparation:

      1. Dry Mix: Combine sugar, cocoa, and salt. Add milk and 250 ml cream. Heat until dissolved.

      2. Yolk Base: Slowly whisk the warm chocolate mixture into the egg yolks.

      3. Thickening: Cook over low heat until thickened (do not boil).

      4. Chocolate: Pour the hot custard over the chopped chocolate; stir until melted. Add honey and the remaining cold cream. Refrigerate for 4–8 hours.
