Description
Waffle crumbs are crispy, natural, caramelized French waffle pieces.
They retain their crunch in buttercreams, fat-based fillings, chocolate, and nut pastes. It is not recommended to use them in water-based fillings or dairy creams. There are no restrictions when used as a decorative topping.
Confectioners use them to enhance the flavor of pastry fillings, as well as for decoration and coating. The crumbs are exceptionally light, meaning a little goes a long way.
